Mandarin Tartlets

What You Need.
5 Mandarin Oranges
One Small Rice Pudding Carton

Step 1. Cut two of the mandarin oranges in half.
Step 2. Use a juice squeezer and squeeze the juice from the four halves. Carefully remove the remaining pulp and clean out the rind. Be careful not to tear the rind. We will use them later as cups.
Step 3. Shape the empty rind halves back to almost round and put them in the freezer for about an hour to harden.
Step 4. Open the rice pudding carton and spoon it into a bowl.
Step 5. Spoon in two tablespoons of the juice you got from the oranges into the rice pudding. Mix it in well. You can drink the rest of the juice.
Step 6. Get the frozen rind halves from the freezer and fill each rind with the pudding and juice mixture.
Step 7. Get the remaining mandarin orange and remove the rind. Carefully separate the sections of orange. Clean off the sections so they look pretty and tasty.
Step 8. Put one or two sections of orange on top of the rice pudding. Use some of your left over pudding to hold the sections in place.
Step 9. Return the finished cups to the refrigerator until you are ready to serve them.
